Midori Spring MATCHA BUTTERMILK PANCAKES Recipe

Ingredients:

  • 3 eggs, separated
  • 1 pinch of salt
  • 3 tablespoons of maple syrup
  • 1 tbsp organic Matcha tea
  • 500 ml buttermilk
  • 300 g flour type 405 (if in Germany), otherwise choose a fine flour
  • 75 g sugar
  • 2 teaspoons of baking soda

Instructions:

  • Beat the egg whites with a pinch of salt until stiff for 2 minutes.
  • Mix the egg yolks and sugar until the sugar has dissolved.
  • Add 3 tbsp maple syrup and sieve in Matcha.
  • Carefully stir in buttermilk (splashing!)
  • Mix the flour and baking powder and gradually add to the liquid.
  • Bake in a waffle iron, but also good for pancakes.
  • Serve with vanilla sauce or yogurt and fruit, with Nutella or jam.
