  • We only select the best tencha (raw material) for our Gold Class – the darker the better since it contains more chlorophyll (see Benefits below). During production, we sort our tencha by color. The darkest tencha are used for ceremonial grade and the lighter tencha are used for culinary grade. Once the darkest tencha is cooled and grinded with a Mikage Stone Mill, it becomes a vibrant emerald green Matcha.

    Gold Class only uses Premium 1st Flush (1st Harvest, early crop) tencha. The Premium 1st Flush is always the best because brand new baby leaves are handpicked and have been on the tea tree for a shorter duration. The time the leaves spend on the tree also affect the taste. First Flush is less astringent compared to the 2nd Flush, therefore Gold Class tastes rich, smooth, creamy and has a sweet aftertaste.

Place approximately 1 teaspoon of Midori Spring Gold Class Matcha into bowl/mug and pour 60mL/2oz of hot water at 72-76°c, 162-169°f. Use a frother or bamboo whisk to blend until a fine foam appears.
