Midori Spring MATCHA MOCHI CAKE Recipe (Semi-Sweet)

If you love Matcha and mochi, here is the perfect recipe for you! It's super easy to make, don't need an electric mixer, just a good old large whisk will do.

What's a mochi? Mochi is a Japanese rice cake made from glutinous rice. In Japan it is traditionally made in a ceremony called Mochitsuki but is also consumed year round. Glutinous rice does not contain gluten.

Ingredients:

- 2 cups of glutinous rice flour (sweet rice flour)

- 1 tablespoon of Midori Spring Organic Matcha

- 1/2 cup of sugar (if you like something sweeter, add a 1 cup)

- 1 cup of vanilla almond milk (you can substitute with 2% milk, coconut milk, rice milk, etc)

- 2 free range eggs

- 1/3 cup of pure olive oil

Instructions: 

1. Pre-heat oven to 350°F.

2. Mix all dry ingredients (glutinous rice flour, sugar, Matcha powder) in a large bowl.

3. Mix all liquids (vanilla almond milk, olive oil) and eggs in small bowl.

4. Slowly pour the liquids into the large bowl with the dry mix while whisking. Make sure to get rid of all clumps.

5. Grease your loaf pan or cake pan with butter or olive oil.

6. Pour mix into pan and bake for approximately 1 hour in oven.

**make sure to check your cake within the first 20 minutes, that it is not rising too quickly. If a "volcano" appears in the middle of your cake it means the temperature is too high. Lower your temperature by 10-25 degrees. Every oven is different so it's always good to keep an eye on your cake**

7. Use a toothpick to check your cake, once the toothpick comes out clean your cake is done!

8. Let it cool completely (will take about 1 hour), and remove cake from pan. The texture will be tougher than most cakes, so it won't break as easily.

9. Cut into desired shapes and sprinkle with coconut flakes (optional)!

10. Time to enjoy!

This dessert goes very well with a traditional Matcha brew.
