Midori Spring STRAWBERRY MATCHA POPSICLES Recipe

These perfect strawberry matcha pops by Erin! Thanks so much.

Ingredients:

For the green “leaf” part:

  • 4 tsp Matcha
  • 1/3 cup coconut milk
  • 3 Tbl water (to help it freeze solid)

For the pink “berry” part:

  • 3 cups coconut milk
  • 2 cups frozen strawberries
  • handful of fresh berries, sliced (optional)
  • molds and sticks 

Instructions:

Combine ingredients for top “green” portion. Whisk until smooth. Pour or spoon into bottom of popsicle mold. Freeze until hard (it took mine about 3 hours). Next, slice fresh berries and set aside. Then combine coco milk and frozen berries for the bottom “pink” portion. Pour into mold on top of frozen green portion, being careful to leave space for pops to expand when they freeze. Take sliced berries and place into poured pink mixture, positioning a few flush with sides of molds if you want them to be visible. Put back in freezer until slushy enough to hold sticks upright. I waited about an hour and a half, though there is variation between freezers. After putting the sticks in, I let them freeze for another 3 hours to finish hardening.
