  • We only use specially selected dark tencha leaves for our Emerald Class. Darker tencha leaves are used for Ceremonial Grade as to the lighter tencha leaves are used for culinary grade. Once the tencha leaves are cooled and grinded with a Mikage Stone Mill, it becomes a vibrant green Matcha. Emerald Class only uses 1st Flush (1st Harvest) tencha. The 1st Flush is always the finest because brand new young leaves are handpicked and have been on the tea tree for a shorter period. The length of time the leaves spend on the tree also affect the taste. 1st Flush is less astringent compared to the 2nd Flush, therefore Emerald Class tastes creamy, smooth, and has a refreshing light sweet aftertaste. Emerald Class is Organic, Kosher, Vegan Certified, Gluten and GMO Free. With an ever changing environment and food industry, it is important for us to provide products that are non-harmful and that can help protect our health and well-being. Our tea plantations are free of pesticides, herbicides and only natural fertilizers are used. Strict Organic and Kosher regulations are followed. High production standards are practiced for all Midori Spring products. The grinding process plays a vital role in the quality and taste of Emerald Class. Place approximately 1 teaspoon of Midori Spring Gold Class Matcha into bowl/mug and pour 60mL/2oz of hot water at 72-76°c, 162-169°f. Use a frother or bamboo whisk to blend until a fine foam appears.
